Tortilla Soup and Too Many New Things

I’m really hard at work today on upcoming things that I’ll post on my blog over the next few weeks, but I was having withdrawals from not writing a post all day, so I wanted to pop in and share a recipe for this amazing tortilla soup that I made last night.

I found the recipe here from Real Mom Kitchen (maybe originally from pinterest?) and changed it to closer suit my tastes. I also didn’t have time in the morning to start up the crock pot, so cooked it all in an hour instead. Directions follow.

My Adaptation of Chicken Tortilla Soup
1 15-ounce can black beans, rinsed and drained
1 14.5-ounce can diced tomatoes (I used regular, no salt added ones)
1 10-ounce package frozen whole kernel corn
1 medium chopped white onion
1 red pepper, seeded and cut into fourths (for flavor that can be taken out when soup’s done cooking; I don’t like the texture of pepper)
1 10-ounce can enchilada sauce (I used mild)
1 10.75-ounce can condensed cream of chicken soup
1 1/2 cups milk (I used lactose-free 2%)
1 15-ounce can of Chicken Broth
2 chicken breasts (grilled the previous day and chilled)
Salt and Pepper to taste
Sprinkling of sharp cheddar cheese to taste when serving
Tortilla strips for serving

Saute the onions in some butter until transparent. When almost cooked through, add in the pepper pieces and cook until soft. Pour in beans, tomatoes, corn, enchilada sauce, condensed soup and chicken broth. Shred chicken with a fork (or by hand) and toss into soup. Once boiling, turn down to a simmer and let cook for about 45 minutes. Add salt + pepper to tase. Serve hot with a sprinkling of cheese and tortilla strips.

Hope you try this soon! It’s delicious and full of flavor without being spicy (I can stand a little spice, but I make most of my foot really mild). You can use spicier enchilada sauce for more heat if you wish.

    That recipe looks fab! Chicken enchalidas is my fave meal to cook so I think I’ll have to try this soup ;)

    Britta….you must stop the madness. Everytime I check your blog I am heading over to Simon Says Stamp or 2Peas…STOP. :) Loving all the great cards lately. Looks like you may have to do a haul video with your orders you just placed. I love it when I can actually “see” the product.

    ooh thanks for the recipe, I will have to give it a try. SSS is killing me too, I have a cart building up too. Of course then today I see one of the things in my cart is now out of stock, isn’t that just my luck! Glad to see they have Studio Calico now, I have been wanting to try some of that stuff but I really don’t like ordering from 10 different places if I don’t have to. Have fun at Scrapfest!

    Britta! What did you do?? I blacked out and when I came to, I’d ordered Distress Inks from SSS (now if I could just be patient and wait 3 weeks for shipping, that would me good, that sort of kills impulse shopping, but apparently, that’s a good thing for me)! I made sure to click through your lovely enabling post :) And I’ve got to try that soup, looks easy and fast!

    Britta, I wanted to let you know that I bought the distress inks (can’t wait until they get here!) and I made the soup! Gets an enthusiastic thumbs up from me and the hubster! (He ate two full bowls!)
